Lightweight 11 Inch Japanese Stainless Steel Knife
An 11-inch stainless steel chef's knife. A good all-around option for someone who wants one reliable knife that handles most kitchen tasks.

This is Global's G-17 — an 11-inch chef's knife made from a single piece of CROMOVA 18 stainless steel. It's hardened to Rockwell C56–C58, which means it holds an edge reasonably well for stainless.
The blade is longer than the standard 8-inch, so it's better if someone has counter space and likes a longer stroke when slicing. The one-piece construction means the handle is steel too — some people like the balance, others find it slippery when wet.
You'll need to hand wash and dry it right away. The warranty doesn't cover chips or rust spots, so it's not the right choice for someone who's rough with knives or leaves them sitting in the sink.
Why it works
- One knife that handles most prep — chopping, slicing, mincing.
- Stainless steel, so less fussy than carbon blades.
- 11-inch blade covers more cutting surface in fewer strokes.
Who it's for
- Someone who wants one solid knife instead of a block set.
- A cook with counter space who'd use the extra length.
What to know
- Hand wash and dry right away — not dishwasher safe.
- Metal handle feels different. Some love it, some don't.
- Warranty excludes chips, rust, and discoloration from food.
